Recipe(tried): New name: Shop til you Drop Sweet and Sour Brisket
Main Dishes - Beef and Other MeatsSHOP 'TIL YOU DROP SWEET 'N SOUR BRISKET
This is a great meal for every woman who loves to shop or play, but has a significant other who loves a big, home cooked meal on the weekend. He will love this dinner, and there is so little work, you just might feel guilty [not so much, LOL]!
Prep time: About 15 minutes
Cook time: Slow cook about 4 hours
Play time: About the same as your cook time, give or take
You will need:
Beef Brisket, I used about 3 lbs.
We like veggies so:
2 1/2 lbs of white potatoes with skins. Peel & rough cut.
Bag of regular size carrots. Peel and rough cut.
1 jar of grape jelly [small jar; I plan to use red current next time for it's slightly tart taste].
1/2 of large can of French's Fried Onions [tried], OR 1 envelope onion soup mix
1 1/2 cups ketchup
2 TBSP dry mustard
Optional: salt and pepper
A few fresh rough cut onions.
Fresh rye bread / butter.
* This will be your gravy. This quantity makes enough for left overs.
Heat oven to 225 degrees F. Set cook time for about 4 hours. If you have a day of power shopping planned, try delayed start and go have fun!
Cut excess fat from brisket, put on the side.
Place Brisket in roasting pan.
Add everything but potatoes and carrots.
Smoosh with your hands until combined.
Add potatoes, smoosh again to cover potatoes with the mixture.
Add the cut-off fat for taste unless you are watching your fat intake.
Cover tightly with foil and shove in the oven.
Add carrots about 1 1/4 hours before brisket is scheduled to be done. I cooked them an hour and they needed a little more time. You can also cook quickly in a pot if you get lost in the stores, LOL!
Now: Go shopping. Play on the computer. Watch a movie. Dp whatever you want to do - you will have hours to yourself, even more if you use delayed start on the oven!
I did this about 9:15 AM just before I left for a day of shopping with my daughter. I set my oven on delayed start [start at 1:00 PM], and set cook time for 4 hours {I planned to eat about 5:00; set as you need].
Shoved in the oven as noted above. Met my daughter at Dunkin Donuts to plan our day, shopped for hours, kiss/kiss with our goodbye's and set out for home.
Got back about 4:00 so there was time to add the carrots. I put the carrots in the pan and went back to playing - had an hour for my piano practice.
Beeper went off.
Set the table.
Served dinner.
NOthing short of fantastic! No muss. No fuss. But very expensive [it was a good day at the mall, LOL].
