Recipe: No-Bake Eskimo Cookies

No-Bake Eskimo Cookies
Makes about 2 dozen cookies

1 1/2 sticks (3/4 cup) butter or margarine, softened
3/4 cup sugar
1 tablespoon water
3 tablespoons cocoa
2 cups quick-cooking oatmeal
1 1/2 teaspoons vanilla
1/4 to 1/3 cup confectioner’s sugarCombine butter and sugar with a wooden spoon until smooth and creamy. Add water, cocoa, and oatmeal; mix well. Cover with plastic wrap and refrigerate 2-3 hours. With spoon, cut off pieces of the chilled dough about size of walnut and shape into balls. Roll balls in the confectioner’s sugar. Store cookies in covered container in refrigerator.
