CHILI MAC CASSEROLE
3/4 cup elbow macaroni, uncooked
1/2 pound ground chicken
1 stalk celery, sliced
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 1/2 tsp chili powder
1 1/3 cups frozen corn kernels, thawed
1 (15 oz) can dark red kidney beans, rinsed and drained
1 (8 oz) can tomato sauce
1/4 tsp salt
1/4 cup shredded cheddar cheese
Cook macaroni according to package directions; drain.
Meanwhile, crumble chicken into a 1 1/2-quart casserole dish. Add celery, onion and bell pepper; mix well. Microwave, covered, on HIGH for 4 1/2 minutes or until chicken is no longer pink and vegetables are tender.
Add macaroni and remaining ingredients, except cheese. Mix well. Microwave, covered, on MEDIUM-HIGH for 10 minutes or until heat through, stirring once.
Sprinkle with cheese.
