After making pumpkin pie filling using the Libby's Pumpkin Pie recipe, I realized that I wasn't using a deep dish pie crust. So instead of wasting the leftover pumpkin mix, I invented a quick and easy version of pumpkin bread. All you do is pour the leftover pumpkin mix over a piece of bread (I used egg challah, but I think next time I might try it with pumpernickel). Then place another piece of bread on top and cover it with the rest of the mixture. You can add more layers depending on how much you have left over. Put it in the microwave for about 1 to 1.5 minutes depending on your microwave. It tastes great hot or chill it in the fridge and eat cold.
