One-Dish Pierogi
rec.food.cooking/Ray Taylor
12 potatoes, boiled and mashed
1 cup shredded Cheddar cheese
1 1/2 cups butter (or margarine)
1 onion, minced
2 cups cooked noodles (I used lasagna noodles)
Mash potatoes and mix in Cheddar cheese. Saute onions in margarine. Cook noodles and allow to cool. In a well-greased casserole, place a layer of noodles, potato/cheese mixture, then onions; repeat with a second layer. Cover and bake at 325 degrees for 25 minutes.
Notes: The amount of butter is correct... pour butter with onions onto potato mixture to moisten mixture. I made this in a 9x13-inch baking pan. It was EXCELLENT!!! - Ray
