Recipe(tried): Hash Brown Quiche
Breakfast and BrunchHASH BROWN QUICHE
1 (24 oz) pkg froz. shredded hash brown potatoes, thawed
3 Tbsp. butter, melted
1 cups shredded pepper jack cheese
additions* (optional)
4 eggs
1 cup half & half cream
1/2 tsp salt
pepper to taste
Preheat oven to 425 degrees. Grease a 9-inch pie plate.
Remove moisture from thawed potatoes by pressing between paper towels. Press hash browns into greased pie plate and brush with melted butter.
Bake crust for 20-25 minutes, until lightly browned. Remove from oven and reduce oven heat to 350 degrees F.
Sprinkle cheese over potato crust. Mix eggs, cream, salt and pepper. Pour over cheese in crust.
Bake for 20-25 minutes, until knife comes out clean. Cool 5 minutes before serving.
6 servings
*note* may add 1 cup of cooked meat such as sausage, diced ham, leftover chicken or turkey, or 1/2 cup cooked and crumbled bacon. Sprinkle over crust when adding the cheese layer.
