Paradise Salad recipe
This Salad is a hit with all dinner parties, and sure to please everyone's taste.
2 bunches of watercress, washed
1 to 2 heads of lettuce
2 cups fresh blueberries or raspberries or 12-oz package of frozen berries
1 pound cherry tomatoes (red and yellow, if possible)
1 cucumber, seeded and chopped
4 passion fruit or 2 kiwi fruit
4 tablespoons white vinegar
2 teaspoons of sugar
1 tablespoon Dijon mustard
Black pepper
Break the watercress into sprigs and tear the lettuce leaves into small pieces. If using frozen berries, thaw and drain. Cut the tomatoes in half. Combine the berries and salad vegetables. Scoop out the pulp from the passion or kiwi fruit and mash. Combine the pulp with the remaining ingredients and spoon over the salad. Serve immediately. Serves 8.
