Parmesan Potato Puffs

2 medium baking potatoes -- peeled and cubed
1/4 cup Parmesan cheese -- freshly grated
2 tbsp. skim milk
1/8 tsp. salt
1/8 tsp. ground white pepper
1/8 tsp. nutmeg
1/4 cup frozen egg substitute -- thawed
vegetable cooking spray

Cook potato in boiling water until tender, drain, and mash. Add 1/4 cup parmesan cheese and next 4 ingredients; beat at med. speed of mixer just until mixture is smooth. Stir in egg substitute. Pipe or spoon potato mixture into 6 mounds on a baking sheet coated with vegetable spray; sprinkle evenly with 1 tbsp. Parmesan. Bake potato mounds at 350 degrees for 25 -30 min. or until lightly browned.
