Pear Salsa

Make 5 cups
2 tbsp vegetable oil
1 medium onion, chopped
1 green pepper, chopped fine
1 large garlic clove, chopped fine
2 tbsp finely chopped parsley
1 tbsp lemon juice
1/2 tsp salt
1 tbsp chopped fresh oregano or
1 tsp dried oregano
1 tbsp chopped fresh basil or
1 tsp dried basil
1/2 tsp Tabasco sauce
2 medium tomatoes, seeded and chopped
coarse
2 to 3 pears, peeled and chopped
Heat oil in medium fry pan. Saute onion until tender, about 3 to 4 minutes. Add green pepper, garlic, parsley, lemon juice, salt, oregano, basil, and Tabasco sauce; cook 2 minutes. Remove fry pan from heat and stir in tomatoes and pears. Cover and refrigerate.
