Peanut Butter Kisses

2/3 cup smooth peanut butter
1/4 cup unsalted butter -- softened
1 cup brown sugar
2 eggs -- large
2 teaspoons vanilla
1 1/2 cups flour
1/4 teaspoon salt
granulated sugar for coating
40 Hershey's kisses

Preheat oven to 350 degrees. In a large bowl, using a handheld electric mixer, set on medium, beat the peanut butter and brown sugar until combined. One at a time, beat in eggs, then the vanilla. On low speed, blend in the flour and salt. Shape the dough into 1 inch balls and roll in sugar to coat lightly. Place on ungreased baking sheets about 2 inches apart. Bake 12-15 minutes until lightly brown. Remove to wire rack to cool. Immediately place a kiss into the center of the ball and crack the cookie.
