Recipe: Peanut Chicken Salad

Peanut Chicken Salad

Salad mix:
3 cups take out rotisserie chicken skinned, boned and pulled into bite size pieces
1/2 cup raw shredded carrots
1/2 cup finely diced celery
8 green onions finely sliced
1 head soft lettuce

Dressing:
1/4 cup smooth peanut butter
2 tbsp hoisin sauce
1 tsp chile paste with garlic (Thai chile sauce) or substitute 3/4 tsp Tabasco with 1/4 tsp minced garlic
1 tbsp dark soy sauce or fish sauce (I like fish sauce)
1 tbsp ketchup
1/4 cup chicken broth
1 tbsp lime juice
2 tbsp light mayonnaise

Mix the chicken, carrot, celery and green onion together in a large bowl.

Whisk the dressing ingredients together and toss the chicken mix with 1/2 the dressing at a time until it is moist and flavorful. Taste & adjust the seasonings if necessary.

Serve at room temperature with a stack of lettuce leaves to roll the chicken mixture up into.
