Oven Chicken a la King

Makes 6-8 servings
chicken pieces - preferably thighs, legs and breast with skin removed
2 boiled eggs
1 can cream of celery soup
1 can cream of chicken soup
1 can broth from cooked chicken
salt and pepper to taste
1-2 cans biscuits
Boil chicken in large pot. I usually use 3-4 thighs, several chicken
legs and 2-3 breasts. The more meat, the tastier. Cut or tear chicken into pieces and place in 9x13 pan sprayed with Pam.
Preheat oven to 400 degrees.
Add cream of chicken soup and cream of celery soup plus 1 can of broth from cooked chicken. Stir together with salt and pepper to taste. Add two boiled eggs, cut up into small pieces.
Cook in oven for 25 - 30 minutes. Remove from oven and add biscuits and cook until biscuits are nice and brown lifting middle biscuit to check for doneness (about 30 minutes more).
Serve with mashed potatoes. This is also very good reheated in the microwave. You do not have to add the eggs but they give a rich flavor and were originally suggested to me by a former home economics teacher.
