Recipe(tried): Pina Colada Cheesecake - Pineapple/Coconut Topping

I, like you found that the pina colada mix did not give much flavor, so I added rum to the cheesecake, along with drained pineapple and coconut. If you want the coconut flavor and not the meat, aimmer the coconut in the pineapple juice and add this instead of the vanilla. I also, made a topping by cooking the pineapple with sugar until consistency of perserves and added coconut, cooled, and spread over the cooled cheesecake.

Pineapple/Coconut topping

1 large can crushed pineapple,
1 cup sugar

Simmer until thick and add 1 cup flaked coconut.
This makes a great cake filling also.
