Hi:
I haven't tried these recipes yet, but they sound very good. I found them at allrecipes.com. I might leave the horseradish out or at least use less. Hope these help!
PINEAPPLE CONGEALED SALAD
1 (3-ounce) package lemon-flavored gelatin mix
1 (3-ounce) package lime-flavored gelatin mix
2 cups boiling water
2 cups water
1 (15-ounce) can crushed pineapple, with juice
1 (16-ounce) package small-curd cottage cheese
3 Tbsp. prepared horseradish
1 cup mayonnaise
1 cup chopped pecans
Directions:
1. In a 9x13-inch dise, mix lemon-flavored gelatin mix, lime-flavored gelatin mix and boiling water. When the mixes are completely dissolved, pour in remaining water. Chill in the refrigerator 1 hour or until gelatin begins to set.
2. Stir in the crushed pineapple, cottage cheese, horseradish, mayonnaise and pecans. Continue to chill 3 hours or until completely gelled.
Makes 15 servings.
HORSERADISH GELATIN SALAD
1 cup boiling water
1/2 Tbps. unflavored gelatin
1 (3-ounce) package lime-flavored gelatin mix
1 cup mayonnaise
1 cup small-curd cottage cheese
2 tsp. horseradish
1 (20-ounce) can crushed pineapple, drained
1 cup chopped pecans
1 pinch salt
Directions:
1. In a medium bowl, stir together the boiling water, unflavored gelatin and lime-flavored gelatin mix until completely dissolved, about 1 minute. Set aside to cool until slightly thickened. This should take about 1 hour.
2. In a separate bowl, mix the mayonnaise, cottage cheese and horseradish with an electric mixer until foamy. Stir in the pineapple, pecans and salt by hand. Fold the thickened gelatin mixture into the pineapple mixture. Pour into molds and refrigerate until set, at least 2 hours.
3. To release gelatin from molds, dip the mold in hot water for 30 seconds to loosen, then invert onto a serving plate.
Makes 6 servings.
