Servings 6
6 cups chicken stock
2 green plantains, peeled and coarsely processed
1 small yellow onion, chopped
1 tablespoon annatto oil or olive oil with 1 tsp Bijol for color
3 garlic cloves, minced
salt and black pepper to taste
Combine all of the ingredients in a large soup pot and bring to a simmer. Reduce the heat to low and cook, stirring occasionally, until the plantain is tender, about 20 minutes.
