Recipe(tried): Polynesian Style Islander Ribs

POLYNESIAN STYLE ISLANDER RIBS

A delicious meal for company and the fantastic aroma greets them at the door.

3 to 4lbs beef short ribs, or English cut
1 tbsp plus 1 1/2 tsp salt, divided
1 (13 1/2 oz) can of pineapple tidbits
1/2 cup catsup
1/4 cup vinegar
1/4 cup water
1/4 cup green bell pepper, minced
3 tbsp brown sugar
1/2 tsp dry mustard

Brown ribs in their own fat in a Dutch oven.

Pour off drippings and sprinkle ribs with 1 tbsp salt; cover and cook over very low heat (approximately 300F) for an hour and a half. Pour off drippings.

Combine the rest of the ingredients and pour over the ribs. Cover and cook for 30 minutes longer.

Serve over hot rice.
