Hi, Kari. Here's another thing I do with pork:
Pork Schnitzel
8 pork chops (or equal amount of pork butt) cut from bone and pounded until thin.
flour for dredging
2 eggs, beaten with a little water
dried bread crumbs for dredging
3 tablespoons butter
3 tablespoons flour
1 cup chicken broth
1 cup sour cream
3 teaspoons dried dill
1/2 teaspoon salt (or to taste)
After the pork chops are pounded until thin, cut tiny radial slits around the edges to prevent curling during cooking. Dredge the chops first in flour, then in beaten egg and last in dried bread crumbs. Saute in vegetable oil over medium heat until brown.
In the meantime, melt the butter in a saucepan. Add the flour and stir over low to medium heat until bubbly but not brown.
Add chicken broth and cook until thickened and boiling. Reduce heat, stir in sour cream and seasonings. Pour over pork chops and serve.
This also works with veal patties, chicken scalloppine, turkey cutlets, tuna croquettes and salmon croquettes.
