Recipe: Pot Roast Leftover Idea

I have an idea. Would this be good? Make some meatballs with hamburgar or a hamburgar/Italian sausage mix. Cook the meatballs thoroughly. Cut your bell pepper tops and stuff with the meatbals. top with the leftover Pot Rost Broth/Veggies and top with cheese.
