Recipe: Potato Ground Beef Taco Pie (Taco Meat Mixture using potatoes - not Puff's)

POTATO GROUND BEEF TACO PIE

FOR THE CRUST:
1/4 cup butter
1/2 cup milk
1 (1 1/4 oz.) pkg. taco seasoning mix
2 cups instant potatoes flakes
FOR THE FILLING:
1 lb. ground beef
1/2 cup onion
1 (15 oz.) refried beans
1/2 cup barbecue sauce
1/4 cup water
1 cup shredded cheese
1 cup lettuce
1 med. tomato

In saucepan, melt butter. Add milk and 2 tablespoons of dry taco seasoning mix. Remove from heat and stir in potato flakes. Press mixture over the bottom and up the side of an ungreased 10 inch pie plate.

In a skillet, cook ground beef and onion until beef is browned and onion is tender. Drain off excess fat. Stir in beans and barbecue sauce, water, and remaining taco mix. Cook and stir until bubbly. Turn into prepared crust.

Bake uncovered at 350 degrees for 30- 35 minutes.

Top with lettuce and cheese.
