Recipe: Pumpkin Cider Bread

Pumpkin Cider Bread

2 1/2 cups whole-wheat flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 eggs -- beaten
1/2 cup applesauce
1/4 cup sugar
1/2 cup apple cider
1/3 cup pumpkin puree

Preheat oven to 350F degrees.

In a medium bowl, combine the flour, baking powder, cinnamon, and nutmeg.

In a large bowl, combine the remaining ingredients. Add the dry ingredients slowly to the large bowl and mix until blended. Do not overbeat. Pour the batter into a 9-inch loaf pan and bake for 40 minutes until the tester
comes out clean.
