Pumpkin Cream Cheese Pie Delight
1 (9-inch) unbaked "Deep" Pie Shell
1 (8 oz.) pkg. cream cheese, softened
1 egg, beaten
1/2 cup sugar
1 tsp. vanilla
2 cups (one 15 oz. can) pumpkin (not pie filling)
1/2 cup sugar
1 tsp. cinnamon
1/2 tsp. ginger
2/3 cup milk
2 eggs, beaten
Garnish:
whipped cream
peanut brittle, broken in small pieces
Cream the cream cheese until light and fluffy.
Blend in the egg, 1/2 cup sugar and vanilla. Spread mixture in bottom of unbaked pie shell.
Blend together remaining ingredients except for the whipped cream and peanut brittle. SPOON this over cream cheese mixture carefully to form a second layer.
Bake at 425F for 10 minutes.
Reduce to 350F and bake 30-35 minutes longer or until set.
Garnish pie with whipped Cream and Peanut Brittle. Yummy!
