Quick Corn Chowder

Serving Size: 6
1 strip bacon -- diced
1 medium onions -- diced
1 can chicken broth -- 14 1/2 ounce
2 cups water
2 large potatoes -- peeled and diced
1/2 teaspoon salt
1/4 teaspoon pepper
1 can whole kernal corn -- drained
1 cup milk -- divided
1/4 cup all-purpose flour
chopped fresh parsley -- optional
In a 3 quart saucepan, cook bacon until crisp; remove to a paper towel to drain. Saute onion in drippings until tender. Add broth, water and potatoes; bring to a boil. Reduce heat, cover and simmer for 15 minutes or until potatoes are tender. Add salt and pepper; mix well. Add corn and 3/4 cup milk. Combine flour and remaining milk until smooth; add to soup. Bring to a boil; cook and stir for 2 minutes. Garnish with bacon and parsley if desired.

6 slices bacon
1 onion -- chopped
1 1/2 cups water
2 packages frozen hash brown potatoes (12-oz. ea)
1 1/2 cups milk
1 1/2 teaspoons seasoned salt
1/4 teaspoon pepper
Cut bacon slices in half and cook in a large saucepan until crisp; remove bacon and drain. Pour off all but 2 tablespoons bacon fat. Add onion and cook until tender, but not browned. Add the water and potatoes. Bring to a boil, turn heat low, cover and simmer 15 minutes or until potatoes are tender. Add the milk, seasoned salt and pepper. Heat thoroughly, but do not let boil. Crumble crisp bacon over chowder.
