QUICK HOPPING JOHN
1 cup boneless pork, uncooked, cubed
1 pound bacon, cut into pieces
1 large onion, chopped
2 1/2 cups water
1 cup rice, uncooked
5 cups canned black eyed peas, including liquid
1 teaspoon cayenne pepper
Salt & pepper to taste
Saute bacon and onions until onions are clear and tender.
Remove from pan, and cook cubed pork in drippings until lightly browned.
Add all other ingredients to pan and cook over medium heat about 30 minutes.
Servings: 6-8
