ITALIAN SALAD
FOR THE CREAMY ITALIAN DRESSING:
2 cartons (8 oz. each) plain yogurt
2/3 cup grated domestic Parmesan cheese
1/4 cup chopped fresh parsley
2 teaspoons grated onion
1 clove garlic, crushed
1/2 teaspoon salt
1/8 teaspoon ground black pepper
FOR THE SALAD:
4 cups tom salad greens
1 1/2 cups (6 oz.) shredded Mozzarella cheese
1 cup sliced zucchini
1 cup sliced fresh mushrooms
1 tomato, cut into wedges
2/3 cup green pepper strips
1/2 cup thinly sliced pepperoni, chopped
1/2 cup French-fried onion rings (optional)
TO MAKE THE DRESSING:
(At least 2-3 hours before serving)
Combine all ingredients and mix well. Chill, covered, 2 to 3 hours to allow flavors to blend.
TO MAKE THE SALAD:
(1 hour before serving)
Combine all ingredients for the salad except onion rings in large salad bowl; toss gently. Chill one hour.
TO SERVE:
Spoon salad onto individual plates. Spoon approximately 1/3 cup dressing over each salad. Onion rings may be sprinkled on top for crunch and garnish. Remaining dressing will keep in covered container in refrigerator up to one week.
