Recipe(tried): Re: Browning Chicken

Hi Marti,

I was watching chef on a shoestring one morning around Christmas and an elderly couple was making a chicken dish. The woman said the secret to browning chicken was to get your pan hot over medium heat, add a little oil, (hot pan cold oil) then place your chicken breasts in. As it cooks lightly nudge it with a fork, if it does not move around the pan leave it be. The reason it is sticking is because it has not cooked away moisture at the outside. When all of this cooks away the skin has nicely browned and will easily release from your pan. I have cooked chicken breasts this way since that show and it does work! Good Luck!
