Recipe(tried): Re: Left over mashed potatoes what to do?

Side Dishes - Potatoes

You can make SPUDNUTS (doughnuts, and they are great)

SPUDNUTS
(yeilds 2 dozen doughnuts)

4 1/2 teaspoons dry yeast
1 cup lukewarm water
2/3 cup melted butter, cooled
1/2 cup sugar
1 teaspoon salt
1 cup mashed potatoes
2 eggs
1 cup scalded milk, cooled
5 to 6 cups flour
oil for frying

Glaze:
2 pkgs. Pd. Sugar
1/8 teaspoon salt
1 cup hot milk
2 teaspoon vanilla

*Dissolve the yeast in lukewarm water. Combine with the butter, sugar, salt, potatoes, eggs, milk and flour and mix until a soft dough forms. Let rise.
*Knead the dough down. Let rise until doubled in bulk.
*Roll 1/2 inch thick on floured surface. Cut into desired shape.
*Let rise for 30 minutes ( I find that if I dust the surface they are rising on with a little flour they come off the surface ALOT easier.)
*Deep-fry in the oil in a deep fryer or skillet until golden brown. Drain and let cool.
*Make your glaze (I find that thinner is better)
*Drizzle over the cooled spudnuts (if you glaze when still a little warm, they will look a little more like commercial glazed doughnuts)

***I KNOW WHAT YOUR THINKING, MY MASHED POTATOES HAVE PEPPER,ECT....IT WON'T MATTER. THAT IS WHAT I THOUGHT THE FIRST TIME MY HUSBAND ASKED ME TO MAKE THEM.
