Refrigerator Cranberry and Apple Granville Jam

2 cups crushed cranberries
1 cup apple (peeled, chopped)
1 1/2 cups sugar
4 teaspoons lemon juice
2 teaspoons grated lemon peel
1/2 teaspoon butter

Crush 2 cups cranberries, combine with 1 cup peeled and chopped apple 1 1/2 cups sugar lemon juice, lemon peel and butter.

Cook till thickened. Stir often. Spoon into 1 pint container and serve either warm or cold. Store up to 1 month in refrigerator.

CRANBERRY MARMALADE:

1 Grapefruit
1 Orange
2 1/2 cups water
3 cups fresh cranberries
1 3/4-ounce package powdered fruit pectin
6 1/2 cups sugar

Remove peel from grapefruit and orange; scrape peel free of excess membrane. Cut peel into thin strips. Use large kettle. Combine peel with 2 1/2 cups water; Cook, covered, low heat, about 20 minutes. Section grapefruit and orange and chop. Combine with 3 cups fresh cranberries and add to peel. Simmer 10 minutes, stirring constantly. Stir in one 1 3/4 ounce package powdered fruit pectin. Bring to boil; stir in 6 1/2 cups sugar. Bring to ROLLING BOIL; boil hard 1 minute, stirring constantly. Remove from heat and skim foam. Let stand 15 minutes, stirring occasionally. Ladle into hot sterilized glasses. Seal. Makes 4 pts.
