Hi Bobbie. So sorry I didn't post these earlier but I have been really busy. The ice cream one is a tested recipe, other isn't.
RICH ICE CREAM
1 can table or whipping cream (about 250 ml/1 cup)
1 can evaporated milk, chilled for at least eight hours
1 can sweetened condensed milk, caramelized*
Vanilla
Allow caramelised condensed milk to cool slightly, then beat. Beat evaporated milk until thick and fluffy like whipped cream. Gradually add whipped milk to caramel, add cream and a little vanilla (about 1/2 tsp.) Allow to set in fridge.
BANOFFEE PIE
1 can sweetened condensed milk, caramelized*
9 inch baked pie shell
3 bananas, peeled, sliced
2 tsp. instant coffee
2 tsp. warm water
1 cup whipping cream
Chocolate coated coffee beans
Place sliced bananas on pie shell. Cover with caramelized milk. Dissolve coffee in water. Whip cream and stir in coffee. Arrange on top of caramel layer and decorate with coffee beans. Very rich but good!
*To Caramelize sweetened condensed milk:
Oven method; Pour 1 can sweetened condensed milk into 9 inch pie plate. Cover
with foil; place in larger shallow pan. Fill larger pan with hot water. Bake at
425 degrees for 1 1/2 hours or until thick and caramel colored. Beat until
smooth.
Stovetop Method: Pour 1 can condensed milk into top of double boiler; place over
boiling water. Over low heat, simmer 1 to 1 1/2 hours or until thick and caramel
colored. Beat until smooth.
Microwave Method: Pour 1 can condensed milk into 2 quart glass measure. cook on
50 % power (medium) for 4 minutes, stirring briskly every 2 minutes until smooth.
cook on 30% power (medium-low) 12-18 minutes ot until very thick and caramel
colored, stirring briskly every 2 minutes until smooth.
CAUTION; NEVER HEAT UNOPENED CAN
