Roux is a thickening agent. It is used to thicken soup somewhat. Very easy to make. Use equal amounts of fat & flour. Fat can be butter, chicken fat margarine,or olive oil. Depending upon the soup I enjoy using oil. Place the ingredients in a pot & heat on low flame keep stirring, do not burn this concoction. When it thickens stop cooking & just mix in maybe 1/2 & srir the soup till you get the desired thickness that pleases you keep adding if neccesary If you need more help send me a post I will notice it.
