Salad Excelsior
Serves 8
Source:Yankee Church Supper Cookbook.
Serve with a creamy Italian,Caesar or other cheesy dressing & hot garlic bread.
1 lb.fresh spinach
1 head garden lettuce
4 hard boiled eggs,quartered
4 tomatoes,skinned & sliced
1 (8 1/2 oz.)can artichoke hearts,drained
1 c.cooked(or canned,rinsed & drained)medium shrimp
1/2 lb.bacon,cooked crisp & crumbled
1 c.toasted & buttered croutons
Wash spinach & lettuce leaves.Drain.Remove thick stems from spinach & tear into pieces.Tear lettuce into pieces.Put in paper towels & refrigerate to crisp.
Line large bowl with mixture of crisped lettuce & spinach.Add eggs,tomatoes,artichoke hearts & shrimp.Toss with dressing,mixing well to coat all ingredients.Sprinkle bacon & croutons over top.
