Baked Beans:
Serves 8

1 lb.dry navy or pea beans,rinsed
6 c.water
1/2 lb.salt pork cur in 1/2" dice
1 small onion,peeled & chopped
1/3 c.molasses
1/4 c.sugar
1 tsp.dry mustard
1/4 tsp.pepper
Soak beans overnight in water.Place beans with soaking water in large kettle(add water to cover if neceesary).Bring to boil,lower heat & simmer till beans are tender.Drain,reserving liquid.
Place salt pork,onion & beans in 2 qt. bean pot or casserole.Combine molasses,sugar,mustard,pepper & 1 c. of reserved bean liquid.Pour over beans,stir thoroughly.Add just enough bean liquid to cover beans.
Cover pot & bake at 300 degrees for 2 hours.Add liquid if necessary & stir.Continue baking 1 1/2-2 hours longer or till beans are tender.Bake uncovered for last half hour.
