Recipe(tried): Sandy's Grandma's Carrot Cake

This is my grandma's recipe... I have such fun with her recipes as she make little notations in the margins. Tee hee

CARROT CAKE

3 C carrots, grated and set aside
2 C sugar
1 1/2 C salad oil
2 C all-purpose flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. allspice
1 tsp. nutmeg
4 eggs
1 C chopped pecans

Mix sugar and oil, add dry ingredients. Mix well, add carrots. Add eggs one at a time, mixing well after each addition. Add nuts. Pour batter into two greased and floured cake pans; 9". Bake in 375 oven for 35 minutes or until center is done.. frost when cool.

Icing:

8 oz. cream cheese
1/2 C margarine
2 tsp. vanilla
1 box powdered sugar

Mix thoroughly, spread on cool cake.
