SIMPLE METHOD OF ROASTING BEEF

A very simple method (if you have a dutch oven) is to place a small amount of water (cover the bottom) in a dutch oven. Place an oval rack on the bottom of the dutch oven and then set the roast on top. (If you don't have one then skip this step).

Without a placing a top on the dutch oven, roast the meat for 1/2 hour at 325 degrees F.

Then remove from oven and season with pepper as desired and top with dry onion soup mix. Place top on the dutch oven and return to oven and cook till desired doneness.

Removes from oven to rest (cover with foil) while you make gravy on top of the stove (in the dutch oven) with the juices at the bottom of the pan. The roast will be very tender.
