Recipe: Smoky Quiche (using bacon and Swiss cheese)

SMOKY QUICHE

Pastry for 9-inch pie shell
8 strips of bacon, fried and crumbled
1/2 cup onions, chopped
1 cup Swiss cheese, grated coarsely
2 tablespoons flour
2 cups light cream
4 eggs, beaten
1/2 teaspoon sugar
1/4 teaspoon ground nutmeg
1 teaspoon salt
Pepper

Mix bacon, onions and Swiss cheese with flour. Add cream and beaten eggs. Add sugar, nutmeg, salt and pepper and correct seasonings, if necessary. Pour into pastry shell.

Bake at 375 degrees F for 40 minutes, or until knife inserted in the center comes out clean. Cut into four large wedges for dinner servings, or into smaller wedges for appetizers.

Makes 4 main dish servings
