Hi Kristen:-) Just last weekend, I used Gina's Southern Green Bean recipe, combined with joy/mo's recipe for Green Beans and New Potatoes. It was really good!! The reason I did this was because the idea of combining the beans and potatoes intrigued me, and because Gina's recipe was a bit more detailed. You could easily use just Gina's recipe and omit the potatoes from Joy's recipe. I didn't use the garlic or vinegar because Joy's recipe did not call for it but I would if I was making just the green bean recipe that Gina posted.
Gina's Southern Green Beans
1 lb. fresh green beans
2 large oinion slices, chopped
1 garlic clove
2 bacon strips
2 T. vegetable oil
pepper
salt
1-2 drops hot sauce (Tobasco - or to taste)
splash red wine vinegar or balsamic vineger
Cook bacon pieces with onion in a medium pot. After 3 minutes, add the oil and stir. Add the seasonings and garlic clove. Add vinegar and beans, sitr to coat. Cover and lower heat to medium low. Check after 5 minutes, stir, and lower heat to low. Cook for about 25 minutes or until tender. You should have a delicious brown sauce coating the beans when they are ready.
Joy's Green Beans and New Potatoes
Put in a big pot: a mess of green beans, snapped, new potatoes, a large onion (chopped), bacon, and salt and pepper (I cut the potatoes in half since I wasn't sure whether they would get cooked all the way through otherwise.) Cook about 1 hour. Joy didn't say to cover the pot but I did. I also added a couple of tablespoons of water instead of the vinegar called for in Gina's recipe. "You'll know by the tenderness of the beans and potatoes (how long to cook these)...really good and makes a good meal and if you don't have a garden you can get the beans and potatoes at the store...hope you enjoy,,joy/mo"
And, Kristen, I, too, hope you enjoy Gina's and/or Joy's recipes:-)!! We sure did:-)!!
