Recipe(tried): Southern Rolled Chicken and Dumplings

Southern Rolled Chicken and Dumplings

First you boil a stewing hen in about 3 cups of water, with only salt and pepper added, for about 4 hours.
Remove the chicken from the pot and let cool.
Dumplings are made as follows;

2 c. flour
2 t. baking powder
1 t. salt
3 T. oil
1 c. milk

Mix well. Put on well floured board and knead for a few minutes to remove stickiness. Roll out to 1/4 to 1/2 inch thickness. Cut in long strips. Pick up a strip of dough and tear it into small pieces as you drop it into the boiling chicken broth. As you begin to fill up the pot of broth, only add dumpling pieces into open spaces. Otherwise they will be one big gooey mess. Continue until all dough is added to the pot. Bone and skin chicken, tear into pieces and add back to the pot. Cook for about 15 minutes or until all the dumplings are done and no longer doughy. Add salt and pepper to taste. Enjoy!!
