Recipe: Spice-Rubbed Flank Steak

SPICE-RUBBED FLANK STEAK

1 (16 ounce) flank steak, trimmed
FOR THE RUB:
1 tablespoon firmly packed brown sugar
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground black pepper

Preheat grill or broiler.

Combine brown sugar, cumin, salt, garlic powder, ginger, cinnamon and black pepper in small bowl; rub over steak.

Spray grill or broiler pan with nonstick cooking spray. Cook steak 6 minutes on each side or to desired degree of doneness, 135 degrees F for medium-rare or 150 degrees for medium on an instant-read thermometer.

Let stand 3 minutes; cut steak diagonally across grain into thin slices.

Makes 4 servings
