Recipe(tried): Spinach, Bacon and Cheese Quiche, Banana Bread with Chocolate Chips

Here are two delicious recipes I used yesterday for a light Spring dinner. I added a tossed green salad to go along with the quiche...the Banana Bread is very moist and the addition of chocolate chips is a sweet delight! Perfect with coffee or a tall glass of cold milk!

SPINACH, BACON AND CHEESE QUICHE
8 servings

1 (9-inch) refrigerated pie shell
1 1/2 cups torn fresh spinach
crumbled cooked bacon, to taste
grated cheese of your choice, to taste (I used fontina)
chopped onion or scallions, to taste
3/4 tsp. seasoned salt
4 large eggs
2 cups heavy (whipping) cream
1/4 tsp. garlic powder
1/2 tsp. dried parsley flakes
1/2 tsp. sugar
1/4 tsp. cayenne pepper

Preheat oven to 425 degrees F. Lightly coat a pie plate with cooking spray.

Unfold pastry and place on pie plate, crimp edges. Line the pastry with the spinach, layer bacon, cheese and onion. Sprinkle with the seasoned salt.

Beat the eggs lightly in a medium bowl; beat in the cream and the remaining ingredients. Pour into the pan.

Bake 15 minutes. Reduce oven temp to 300 degrees F and bake an additional 30 minutes. Place foil around edges and tent over top if necessary during the last 10 - 12 minutes of baking. Remove from oven and let stand 10 minutes before cutting.

Serve in wedges.

BANANA BREAD WITH CHOCOLATE CHIPS
Makes 1 loaf

1 cup butter, softened
1 cup sugar
2 eggs, lightly beaten
3 ripe bananas, mashed
2 cups all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/2 cup chopped pecans and/or chocolate chips (I used both)

Preheat oven to 325 degrees F.

Cream butter and sugar til fluffy. Add eggs and mashed bananas stirring only to blend. Add the flour, baking soda and salt. Do not overstir. Add nuts and or chocolate chips. Pour into greased loaf pan.

Bake for 60-70 minutes or until a toothpick comes out clean. Cool for 10 minutes, invert onto wire rack and cool completely.
