STEAK WITH ROSEMARY
(serves 3-4)
1 lb boneless sirloin steak
1/3 cup Brandy
2 finely chopped green onions
2 tsp freshly snipped rosemary
2 garlic cloves crushed
1 tsp freshly ground black pepper
3 thinly sliced tomatoes
additional rosemary
Cut the steak into serving-sized pieces, and pierce each piece on each side with a sharp knife, taking care not to cut through. Mix brandy with onions, rosemary, garlic, onions, and pepper in a large bowl. Marinate in mixture at room temperature, turning occasionally, for 2 hours. Preheat broiler. Grill over medium coals untill barely done. Place grilled steaks on broiler rack, covering with sliced tomatoes. Sprinkle tomatoes with additional rosemary. Broil 5-7 minutes, or until done.
