Recipe: Strawberries and Cream Cake with Filling and Frosting

Hi all ! I just wanted to share a GREAT strawberry
cake recipe that I found and made today.It's from the 'Gold Medal State Fair Cakes' booklet.

Strawberries and Cream Cake
2 1/3 cups all-purpose flour
2 1/2 tsp.baking powder
2 cups sugar
1 small package ( 4 serving size )strawberry-flavored
gelatin
1 cup butter or margarine,softened
4 eggs
1 cup milk
1 tsp. vanilla extract
1/2 cup pureed strawberries
Filling and Frosting ( follows )

Preheat oven to 350 F.Grease and flour 3 round 9" x 1 1/2" cake pans.

Mix flour and baking powder in small bowl. Beat
sugar,dry gelatin and butter in large bowl with electric mixer on low 30 seconds to incorporate, scraping sides ; Beat on high for 3 minutes, scraping bowl occasionally, until fluffy.

Add eggs,one at a time , beating on high speed after each addition. Beat in flour mixture and milk alternately on low speed.Beat in 1 tsp. vanilla extract and pureed strawberries. POur batter into pans.
Bake cake for 25-30 minutes or until toothpick inserted in centre comes out clean. Cool 10 minutes ; remove from pans to wire rack to cool completely.

Prepare Frosting :
1/2 cup butter or margarine, softened
1-8 oz. package cream cheese, softened
4 cups powdered sugar
2 tsp. vanilla

Beat butter and cream cheese on low speed until
blended well.Beat in powdered sugar and vanilla until creamy.

Prepare Filling :
1 1/2 cups whipping ( heavy ) cream
2 TBSP. sugar
1/2 tsp. vanilla
1 1/2 cups sliced strawberries ( & more for decoration
if wanted )

Beat whipping cream,sugar and vanilla in a chilled
mixing bowl on high speed until stiff. Place 1 cake layer on plate ; spread with 3/4 cup whipped cream mixture and top with 3/4 cup of sliced berries.Top with second layer ; spread
with 3/4 cup of whipped cream and top with the
remaining 3/4 cup sliced berries.
Top with the third layer. Frost sides of cake with
frosting ; spread remaining
whipped cream mixture on top and top with more
berries if desired. Store
covered in refrigerator. I hope ya'll enjoy this here good
