Strawberry Almond Breakfast Bread
1 1/2 cups flour
1 1/2 teaspoons cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/2 cup cooking oil
1 cup sugar
1 (10 oz) package frozen sliced strawberries, defrosted
2/3 cup chopped almonds
Sift together flour, cinnamon, soda, and salt into a large mixing bowl.
Beat eggs in a bowl until fluffy. Add oil, sugar, and strawberries.
Combine flour and strawberry mixtures, mixing until well blended; stir in almonds.
Scrape dough into a greased and floured 8-inch loaf pan.
Bake in a preheated 350F oven for 1 hour and 10 minutes, or until done. Cool in pan 10 minutes, then turn out onto a rack to cool.
