Strawberry Butter
Makes 1 1/4 cups

1/2 pint fresh strawberries
1 cup butter (2 sticks), softened
3 tbsp confectioners' sugar

About 30 minutes before serving (or up to 3 days ahead of time):

In a small bowl mash the strawberries until crushed well; set aside. In separate bowl beat the butter at high speed. Add powdered sugar and beat until fluffy. Beat in berries until smooth. Spoon into 1 1/2 cup container. Cover and refrigerate.
