Recipe(tried): Sunday Dinner at Our House - Crockpot Roast Beef with Gravy, Copper Pennies, Paula Deen's Peanut Brownie Cupcakes

Hey, y'all! Today we had:

Crockpot Roast Beef with Gravy
Rice
Zipper Cream Peas
Copper Pennies
Sliced Tomatoes
Fruit Salad
Banana Pudding
Paula Deen's Peanut Brownie Cupcakes
Sweet Tea with Lemon

CROCKPOT ROAST BEEF AND GRAVY

1 (3 to 4 lb.) chuck roast
1 Tbsp. olive oil
1 can beef broth
1 can condensed cream of onion soup
2 onions, sliced
1 (8 oz.) pkg. mushrooms, sliced
1/4 cup steak sauce
1 pkg. onion soup mix
Salt and pepper

Place olive oil into a pan and let it get hot. Place the roast into the hot oil and sear on all sides. Remove from the pan.

In the crockpot, place onions, mushrooms, beef broth, onion soup mix, and steak sauce. Mix well Add the roast. Coat the top of the roast with 1 can cream of onion soup.

Let cook on HIGH for 4-5 hours or on LOW for 8-10 hours.

COPPER PENNIES

2 lbs. carrots (I used the whole baby carrots)
1 can condensed cream of tomato soup
1 cup sugar
1 cup white vinegar
1 cup vegetable oil
1 tsp. dry mustard
1 tsp. Worcestershire Sauce
1 tsp. salt
1 tsp. pepper
1 onion, chopped
1 green bell pepper, chopped

Cook carrots in salted water until they are just done (usually 7 to 9 minutes). Drain well and set aside.

In a large bowl mix the sugar, vinegar, vegetable oil, mustard, Worcestershire Sauce, salt, pepper, and tomato soup.

Place carrots, onions, and bell pepper into the sauce mixture. Place in refrigerator and let marinate for several hours or overnight before serving.


PAULA DEEN'S PEANUT BUTTER BROWNIE CUPCAKES

1 pkg. brownie mix, mixed according to pkg. directions (with 1/4 cup water, 3 eggs, and 1/2 cup vegetable oil)
1 (6 oz) pkg. peanut butter chips

Preheat oven to 350 degrees F. Place cupcake liners into the cupcake tins.

Prepare brownie batter according to package directions. Fill each tin 1/2 full with the brownie mixture. Add 1 Tbsp. of peanut butter chips to each cupcake. Top each cupcake with remaining brownie mixture.

Bake at 350 degrees for 18-20 minutes.

These cupcakes are some of the best that I have ever eaten. Whenever we have a bake sale at school, this is the recipe that I am planning on making!
