Recipe: Surfside Salmon Loaf with Creamed Peas (Quaker Oats recipe, 1960's)

FOR THE SALMON LOAF:
2 cans (1 lb. each) salmon, drained and flaked
1 1/2 cups Quaker Oats (quick or old fashioned, uncooked)
1/2 cup chopped onion
2 tablespoons minced parsley
2 teaspoons salt
1/2 teaspoon pepper
1 1/2 cups milk
2 eggs, beaten
FOR THE CREAMED PEAS:
1/4 cup butter or margarine
1/4 cup all-purpose flour
1/2 teaspoon salt
Dash white pepper
2 cups milk
1 (10 oz.) pkg. frozen peas, cooked and drained
TO PREPARE THE SALMON LOAF:
Combine all ingredients thoroughly. Pack firmly into greased 8x4x2-inch loaf pan.
Bake in preheated moderate oven (350 degrees F) about 1 hour and 15 minutes. Let stand 5 minutes before slicing.
TO PREPARE THE CREAMED PEAS:
Melt butter in medium-sized saucepan. Stir in flour, salt and pepper; blend well. Gradually add milk, stirring constantly until mixture comes to a boil and is thickened. Stir in peas; heat thoroughly.
TO SERVE:
Serve creamed peas hot over salmon loaf slices.
Makes 8 servings
