MINT CHOCOLATE BROWNIES
1 stick (1/2 cup) unsalted butter, cut into pieces
2 squares (1 ounce each) unsweetened baking chocolate, chopped
1 cup sugar
2 large eggs
3/4 teaspoon vanilla
1/2 teaspoon mint extract
2/3 cup Swans Down Cake Flour
1/2 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 350 degrees F. Butter and flour an 8-inch-square baking pan, knocking out excess.
In a double boiler or metal bowl set over a saucepan of simmering water melt butter and chocolate, stirring, until smooth and remove top of double boiler or bowl from heat. Cool mixture 10 minutes.
Transfer cooled chocolate mixture to a bowl and whisk in sugar. Whisk in eggs, vanilla, and mint extract until glossy and smooth.
In a small bowl stir together flour, baking powder, and salt and add to chocolate mixture, stirring until just combined. Spread batter evenly in prepared pan.
Bake in middle of oven 20 to 25 minutes, or until a tester comes out with a few crumbs adhering to it. Cool brownies completely in pan on a rack before cutting into 12 squares. Brownies may be made 2 days ahead, wrapped in plastic and left uncut in pan.
