Recipe(tried): Swedish Meatballs, Pasta Machine Tagliatelle, Stuffed Shells, Chicken Enchilladas, Pot Roast - June-winnipeg Hope these help

I'm sorry it took me a few days to get back to you. My husband enjoys these recipes and I hope you can find one or two for yours.
Swedish Meatballs
Meatballs
1/4 cup egg substitute
1 pound ground turkey
3/4 cup bread crumbs
1/4 cup chopped onion
1/4 cup parsley
1/8 tsp allspice
dash salt and pepper
Mix all ingredients well, I find my fingers to be the best. Shape into meatballs to desired size, I make into 1 once. Saute in a deep fry pan in 1 tbsp butter for about 10 mins, untill they are cooked. Remove meatballs from pan and complete following recipe in the pan using the drippings.
Sauce
1 cup milk
1 1/4 cup light cream
2 Tbsp all purpose flour
2 Tbsp instant beef bouillon granules
1/8 tsp pepper
In the hot pan from the meatballs, stir in flour, bouillon granules and pepper with the drippings. You will from a roux. Then slowly add milk and stir continually. Once it starts to bubble, add meatballs. I think this is best served over noodles. I make tagliatelle with my pasta machine which my husband loves.
Pasta Machine Tagliatelle
2 cups bread machine flour
2 Tbsp olive oil
1 large egg
1/4 cup water
Place the flour in the pasta maker. Mix the oil, egg and water. Then slowly add the liquid with the machine turned on. I have found that sometimes I have liquid left over. The flour must be small pea sized lumps and it is ready. That is why I add the liquid slowly. If too dry after adding all liquid, slowly add a little bit of water to get the peas, or if too wet, slowly add flour. Extrude or roll dough and cut into broad ribbons.
Cook in 4-6 qts of salted boiling water for about 3-5 mins only. Don't over cook.
**You could also just use egg noodles or your husbands favorite pasta.
Stuffed Shells
8-12 large pasta shells
1 sm container of cottage cheese
1 sm container of ricotta cheese
1 8 oz package of mozzeralla cheese, shredded
1 egg
1/4 cup parmesan cheese
1 tablespoon Italian Seasoning
1 jar of favorite speghetti sauce
Cook pasta according to package instructions. Mix cottage, ricota, 1/2 cup mozzeralla, egg, half of the parmesan cheese and Italian seasoning together in a bowl. Fill the cooked pasta shells with the filling. Spread sauce over shells, make sure to cover so you don't get any hard spots and bake at 350 for 30mins. Then add mozzeralla cheese and remainder of parmesan cheese.
**I'm sorry the measurements aren't exact, this is one I do from my head. Let me know if something doesn't make sense. Also, sometimes I add ground beef to the sauce.
Chicken Enchilladas
My husband doesn't like the traditional cream sauce, so I make it this way for him. Also, it is very waist friendly opposed to cream sauce.
2 cups cookeds chicken, shredded
8 corn tortillas
1 can green enchillada sauce (available mild or hot)
2 cups extra sharp cheddar cheese, shredded
Chopped tomatoes, shredded lettuce, salsa, sour cream, quacamole. (my husband only eats tomatoes and lettuce, everything else is for me :)
Heat enchillada sauce in a sauce pan. Dip the tortillas one at a time in the sauce to soften. Set aside in a greased baking pan. Once all tortillas have been dipped, I add chicken to the sauce and then fill each tortilla and roll up. Sprinkle the top with left over sauce, if any. Bake for 1- minutes at 350. Then sprinkle with cheddar cheese and cook until melted and bubble. spread the lettuce on the plates, place tortillas on top and then sprinkle w/tomatoes and other toppings or just place on the side.
Pot Roast
1 roast 3-5 pounds
1 bag fresh baby carrots
3 yukon gold potatoes, peeled, cut into good size chunks
2 cans v-8 juice
1 Tablespoon soy sauce
1 Tablespoon Worchestire
Salt and pepper to taste
Mix v-8 juice, soy sauce, worchestire, salt and pepper in crock pot. Add carrots and potatoes and make a hole in the middle for the roast. Cook on low for 8-10 hours. The meat will fall apart and taste excellent. You can change the vegies to any combo. I would suggest big biscuits with this. And if he doesn't like the gravy it makes, just strain his.
I really hope this helps. I change a lot of recipe ingredients and it doesn't usually make a big difference. Good luck.
