Sweet and Sour Kebabs With Vegetables
Serves 4
6 shallots or small onions
16 small open mushrooms
1 lb. lean lamb or pork fillet, cut into cubes
1 large yellow peppers, seeded and cut into large squares
1 large green pepper, seeded and cut into large squares
Marinade:
4 tablespoons extra virgin olive oil
2 tablespoons soya sauce
Juice of a lemon
2 teaspoons tomato ketchup
2 teaspoons orange or plum jam
Freshly ground black pepper
A few drops of Tabasco (optional)
Prepare the vegetables, cutting the onions in half. Steam shallots or onions in a steamer or in a very little water for about 5 minutes to soften slightly. Drain and place in a bowl with the mushrooms and the meat.
Mix all the marinade ingredients and pour over the vegetables and meat. Leave to stand for at least an hour or until they are required. Turn over with a spoon from time to time.
Thread the marinated meat and vegetables, with the peppers and tomatoes, onto eight skewers.
Place on the barbecue or under a hot grill and cook for about 10 minutes turning from time to time until the meat is cooked through.
