Ten Precious Noodles (chao mein)
From: The Fine Art of Chinese Cooking by Lee Su Jan
Servings: 4-6

3 cups cold cooked noodles
1/2 cup cooked pork, cut into strips
1/2 cup shrimp, shredded, or chicken, shredded
1/2 cup cooked ham, cut in strips
2 1/2 cups cabbage, celery or any vegetable, cut in strips
5 large mushrooms, cut in strips
3 eggs beaten or 3/4 cup Eggbeaters

Mixing sauce:
2 tablespoons soy sauce
1 tablespoon sherry
1/2 tsp sesame oil ( I used vegetable)l
1 tsp salt
pinch of MSG (opt)

3 tablespoons peanut oil for frying
1 slice ginger, diced
2 scallions, diced
2 cloves of garlic, minced

Heat skillet to 375F. add oil and heat thoroughly. Fry scallions, garlic and ginger to a golden brown. Mix meat and shrimp with beaten eggs. Fry in skillet for 2 minutes. add vegetables and sauce. Cook for 2 minutes, stirring constantly. Add noodles and mix with all other ingredients. Quick fry for 3 minutes. Serve hot.
