Recipe: Tex-Mex Rice

TEX-MEX RICE

2 tbsp. peanut oil or butter
1/2 cup chopped onion
2 garlic cloves, minced
1 cup Uncle Ben's converted rice
1 cup peeled, chopped tomatoes
2 cups chicken stock (or water)
2 tsp. chili powder
salt

In a saucepan heat the oil. Add the onion and garlic. Saute about 3 minutes.

Add rice and stir to coat rice with oil.

Add tomatoes, stock, chili powder, salt and bring to a boil. Cover the pan and simmer the rice about 18-20 minutes until rice is tender.

Serve immediately.
