My recipe for Spanish rice and beans is sort of one of those recipes that I do by sight and by taste. There are a couple of ways you can do it. One that is really easy , if you can find the condiments in your local store. Then one that requires a lot of work if you can't find the condiments (I have a home made recipe for the Sofrito but haven't found one for the Recaito But I might be able to find one.) It's the condiments in the recipe that really make it delicious.

Here in NYC we can pretty much find the condiments in almost any store since we have such a large Spanish (Puerto Rican, Mexican) population. I think, however, you might be able to find the condiments in your local supermarket, but you would have to look in the ethnic section, or you may be able to find them near the GOYA canned beans or GOYA products. I also know that the Sofrito (green colored condiment) and Recaito (orange colored condiment) sometimes can be found in the freezer section (in small white tubs under the GOYA lable). I guess the frozen forms tend to be a little fresher. However, the jars that are found in the unrefrigerated section are fine too. The Adobo with cumin, can again be found in the same section of your grocery store usually along with the GOYA products, or you might find then in the dried herbs and seasonings section. (It almost looks like garlic salt or Mrs. Dash)

Here's my easy recipe. I use GOYA products since they are very popular amongst the Spanish community. I've also included one of my Spanish friends recipe for rice. I know that it sounds ridiculous, but believe it or not, there are an amazing amount of different ways you can cook the same rice but in the end have it with a totally different texture and flavor. By the way, when I say Spanish, I guess to be more precise, I am meaning Puerto Rican Style. I hope you are able to find the condiments cause this is a really flavorful easy dish. Some nights we sit down and that's all we have. It also tastes great with chicken on the BBQ!!!

Easy Spanish Beans

Amount Measure Ingredient -- Preparation Method

2 cans (15 ounces a piece) small red beans -- rinsed and drained
2 cans (8 ounces a piece)
1 Tablespoon Adobo with cumin -- to taste
1 medium spanish onion or any sweet onion -- chopped
1 cup Sofrito
1 cup Recaito
1/2 cup cilantro -- chopped

1. Place all of the ingredients, except the cilantro into a medium size pan and stir well.

2. Simmer on low heat for about 20 minutes. Add the cilantro, stir completely and then serve over rice.

White Rice

1 cup rice -- rinsed and drained
2 cups water
3 tablespoons olive oil
2 teaspoons salt

1. Wash 1 cup rice at least 3 times under cold water and drain. (This is done to remove the starch.)

2. In a heavy 2 quart pan (preferably nonstick) bring 2 cups water with 2 teaspoons salt to a boil.

3. When water is at a rolling boil, add rice...and bring back to a second boil.

4. Let it cook, uncovered, at high heat until water is absorbed. (This should take about 5-8 minutes.)

5. Add 3 tablespoons olive oil, stir and simmer covered, on low heat for 10 minutes or more or until tender. - - - - - - - - - - - - - - - - - -

NOTES : *For regular long grained white rice the proportion is 1 cup rice to 2 cups liquid.
For Japanese short grained rice the proportion is 1 cup rice to 1 1/4 cups liquid.
